Passover Lasagna

This fast, easy (and yummy) recipe comes to us from Michelle at MichelleOshen.com. Here is the recipe from her site:
Michelle Oshen’s often imitated never quite duplicated Matzoh Lasagna!
Ingredients:
- one 7.5 x 7.5 pan (or there about)
- 3 sheets of Matzoh
- One egg
- 8oz Ricotta Cheese
- 8oz Mozzarella Cheese
- 8oz Marinara Sauce
- Salt & Pepper
Prepare Passover Lasagna:
Preheat over to 350 degrees
Mix the egg with the ricotta cheese. Set aside. Dampen the three sheets of matzoh and blot dry with a paper towel.
- Step No. 1. Lay the first sheet of matzoh in the pan and cover with 1/3 ricotta/egg mix and 1/3 marinara sauce.
- Step No. 2. Repeat step No. 1
- Step No. 3. Repeat step No. 1 but this time top with the mozzarella cheese
- Bake in pre-heated 350 degree oven for 45 minutes.
