Passover Coconut Macaroons

Macaroons are the perfect cookie replacement for Passover.
Passover Coconut Macaroons Ingredients
- 2 egg whites
- ½ tsp vanilla
- Pinch of salt
- 2/3 cup sugar
- 1 ½ cups flaked coconut
Directions:
- Grease a large cookie sheet.
- Using a hand mixer or a stand mixer, beat egg whites, vanilla and salt until soft peaks are formed.
- Gently fold in coconut.
- Drop teaspoons of batter onto greased cookie sheet.
- Bake at 350 degrees for 20-25 minutes.
You may substitute kosher for Passover chocolate chips for the coconut if you want to make chocolate chip macaroons.
