Passover macaroons

Macaroons are the perfect cookie replacement for Passover.


Passover Coconut Macaroons Ingredients

  • 2 egg whites
  • ½ tsp vanilla
  • Pinch of salt
  • 2/3 cup sugar
  • 1 ½ cups flaked coconut

Directions:

  1. Grease a large cookie sheet.
  2. Using a hand mixer or a stand mixer, beat egg whites, vanilla and salt until soft peaks are formed.
  3. Gently fold in coconut.
  4. Drop teaspoons of batter onto greased cookie sheet.
  5. Bake at 350 degrees for 20-25 minutes.

You may substitute kosher for Passover chocolate chips for the coconut if you want to make chocolate chip macaroons.
