Chopped Liver Recipe Ingredients:

  • 1/4 pound chicken livers
  • 2 Tbsp oil for frying (vegetable oil or rendered chicken fat)
  • 1/4 cup sliced fresh mushrooms
  • 1/4 cup diced onion
  • lemon juice to taste
  • salt, pepper and paprika to taste
  • parsley and red radish for garnish (optional)
  • Serving suggestion: matzoh or celery

Directions:

  1. Boil chicken livers until soft. Drain. There should not be any red in the middle when they are fully cooked.
  2. Chop livers in a food processor. If you don’t have a food processor, you can use a grater or chop it in a bowl.
  3. Fry the mushrooms and onions for approximately three minutes or until soft.
  4. Add mushroom and onion mix to food processor and process whole mixture (or chop in a bowl) until smooth. Additional oil can be added to reach desired consistency.
  5. Season with salt, pepper, paprika and lemon juice to taste
  6. Spread on matzoh or celery slices.
  7. Garnish plate with a red radish or sprigs of parsley.
