Chopped Liver

Chopped Liver Recipe Ingredients:
- 1/4 pound chicken livers
- 2 Tbsp oil for frying (vegetable oil or rendered chicken fat)
- 1/4 cup sliced fresh mushrooms
- 1/4 cup diced onion
- lemon juice to taste
- salt, pepper and paprika to taste
- parsley and red radish for garnish (optional)
- Serving suggestion: matzoh or celery
Directions:
- Boil chicken livers until soft. Drain. There should not be any red in the middle when they are fully cooked.
- Chop livers in a food processor. If you don’t have a food processor, you can use a grater or chop it in a bowl.
- Fry the mushrooms and onions for approximately three minutes or until soft.
- Add mushroom and onion mix to food processor and process whole mixture (or chop in a bowl) until smooth. Additional oil can be added to reach desired consistency.
- Season with salt, pepper, paprika and lemon juice to taste
- Spread on matzoh or celery slices.
- Garnish plate with a red radish or sprigs of parsley.
